Ash gourds are oblong-shaped, grey, fuzzy-skinned vegetables with white sweet-tasting flesh. They are high in water content and contain good amounts of fibre, carbohydrates and protein. They also contain minerals such as calcium, phosphorous, iron and vitamin C. They produce a cooling effect in the body and aid battle "urine disorders" and "ulcers". They act a natural blood coagulant and good for maintaining "oral health", increasing appetites and regulating blood pressure. These are used in making curries, "sabjis", and as main course accompaniments. They are used to make candy such as "petha" and juices.
