Long green brinjals are long, green, smooth and glossy skinned, pleasantly bitter tasting vegetables. These are low in sodium, saturated Fat, and cholesterol. They are high in dietary fiber, folate, and minerals such as potassium, manganese, vitamins C, B6, and K, Thiamin, Niacin, Vitamin B6, Pantothenic Acid, Magnesium, Phosphorus and Copper. Calories = 24. They are excellent for "weight loss" and for keeping a check on "cholesterol levels". They aid fat and protein metabolism and help battle inflammation and neurological diseases. These are used in making curries, "sabjis", and as main course accompaniments.
